Ginger Broccoli Soup Recipe

Ingredients

Onion, sliced finely

Vegetable stock

Water

1" piece of ginger, grated

Cayenne pepper
Juice of 1 lemon

lb.
Fresh broccoli, cut into bite sized florets

Directions

  1. Melt ghee over medium low heat & add onion.
  2. Cook till it begins to brown, stirring occasionally.
  3. Meanwhile heat stock, water, ginger in pot for 5 to 6 minutes, do not let boil.
  4. Add onion, cayenne, lemon juice & broccoli.
  5. Cook over medium heat for 7 minutes, stir occasionally.
  6. Do not let soup boil.
  7. Serve right away.
